This two-day program, presented by the AOCS Continuing Education Program, offers a high-level look at core aspects of processing edible fats and oils. It is suitable for non-chemists and people who are new to the industry as well as those with more experience who would like to refresh and update their knowledge. This hybrid course will be available in person in Denver, Colorado and online. Learn more about registration details.

Day one provides an overview of fats and oils chemistry and extraction methods including seed pressing and solvent extraction before exploring processing steps and practices in more detail, including degumming, bleaching, deodorization, neutralization, and fractionation.

Day two focuses more on quality assurance, handling of finished oil products, and business considerations with sessions on storage and shipment, plant safety and management, contaminant control, and sustainability.
